Perch en papillote

With this recipe I participate on the event Think Spice.. Think Twice: Mastic Gum or Fennel Seeds

This event, is hosted this month by Ivy from Kopiaste and by Sunita from Sunita’s World. Every month is dedicated to a different spice, and this month is time for Mastic Gum and Fennel Seeds.

Mastic gum is not known in Spain for traditional cuisine and it's hard to find, so that's why I preferred to make a recipe with Fennel Seeds.

What we need:

- 1 piece of perch per person (about 150-200 g each)
- 1/2 leek
- 1 lemon
- Fennel seeds
- Olive oil
- Salt
- Pepper

How we prepare:
We place a single piece of perch in an aluminium foil.
We add some salt and pepper and also a little olive oil to the perch.
We put some sliced leek on fish and finally the crushed fennel seeds.


We pack the foil completely and put them in the oven, preheated at 200º C.


Once the fish is done, we open the packs taking care not to be scalded.


We serve with some vegetables.
